tenant only gave two weeks notice when 30 days is required. Can we keep a part of the security deposit?

It depends on what your lease says. But the security deposit may be used for any physical or monetary damages. SO, therefore, if you did not get the full 30 days notice, the tenant is responsible for a full months rent. So you would be entitied to the full month. Be sure you list that on the accounting of the security deposit and return the deposit according to your state's regulations.
