What should I or do I need to offer if tenants will go without hotwater for two days?

Why? It only takes a couple of hours to change out a hot water heater. First you explain the situation to them they might be fine with it and not expect anything. If they give push back or a are upset you could offer to put them in a hotel for the night, or prorate a day of rent off their rent or maybe just offer $100 for their inconvenience.
