What's the best way to screen a "Self-Employed" applicant. How can Employment & Income be verified?

You can ask for copies of their tax returns, although really the best thing to do is look at their credit history; if they pay their bills on time consistently, their income isn't likely to be an issue. Also find out how long they've been in business, and try to look for stability indicators - how long has their business been at its current location? How professional does the business seem? Etc.
