I have a prospected tenant that wants to use her madden name before it is legally changed. Her divorce was just finalized, now she is changing her name back to her madden name. Can I use the madden name or do I have to put the lease in her married name until the change goes thru the courts?

I would simply write in her maiden name with a parenthetical "(AKA Jane Doe)" so that both names are there to cover you.
