What kind of documents should I be requesting to see? So far I am requesting State ID and Check stubs

I'm surprised no one has responded to your question. So let me be the first. I require 2 months of income verification (pay statements), 3 months of bank statements, 4 months of paid rent receipts and of course, a valid drivers license.
