I own a 5000 sq ft home in CO, with expensive furniture. If the tenants dogs damage the furniture/carpet, etc, beyond the pet deposit amount I collect, can I also use the 'regular' security deposit towards that damage?

Yes you can always collect especially if the damages are more than the security deposit. Just be sure to have receipts or quotes for the amount to repair and always have photos of damages for proof.
