I'm in Florida, if my tenant wants to move in before the 1st, when the 1-year starts, is this included in the Lease? I heard I should collect the full-month on whichever date they want to move in, and pro-rate the rent due on the 1st. Does this also need to be reflected in the lease?

Yes you would want to create the prorated amount as the first months rent.
