We listed a rental with the caveat "No Dogs" but when a prospective tenant showed up to see the property she had a dog with her, calling it her service dog for seizure disorder. Since the "no dogs" clause was in the original posting are we safe from the ADA if she files a claim?

No a service dog as long as the tenant has the official paperwork is not a pet it is considered an occupant or person! The tenant does have the right in this case and if they go after you you could also be hit with discriminating. Either way it should be noted in the lease and if there are damages it can be taken from the security deposit and treated as damages that the tenant themselves caused.
